Winter salad with quinoa and beetroot

If we take a look at the seasonal calendar, we can see that a variety of different vegetables are grown in winter, too. The beetroot and the kale, which are added to our winter salad together with quinoa, are also currently on the seasonal calendar.

So how about trying something new and enjoying a salad in winter instead of the “traditional, fresh summer salad”?

  • 1 beetroot tuber
  • 1 cup quinoa
  • 100 g kale
  • Salt
  • Pepper
  • olive oil (alternatively also linseed or walnut oil)
  • white balsamic vinegar
  • walnuts or sunflower seeds



First wash and cut the kale. Then add some salt, pepper and oil and knead it to make it softer. Put the kale aside and let it “draw”.

If you have a fresh beetroot tuber, cook it first. Of course you can also take pre-cooked beetroot from the shop.

You should first wash and then cook the quinoa according to instructions on the packaging. Usually you should take double the amount of water or vegetable stock. The quinoa is first brought to the boil, then you turn down the heat. As soon as the quinoa is ready, it should cool down a bit.

Now put all the ingredients in a bowl and mix them. The amount of oil and vinegar is up to you. And if you want, you can garnish your winter salad with quinoa and beetroot with walnuts or sunflower seeds.
