Ingredients for the warming cereal soup
- 120 g finely ground spelt (optimally produced with your
Salzburg grain mill
- 500 ml vegetable broth
- 1 onion
- 2 tsp olive oil
- 2 pinches salt (iodized)
- 2 tablespoons dried lovage
- 2 tablespoons chopped parsley
First peel the onion, cut into small cubes and sauté in olive oil. Then add the spelt meal and steam for a short time. Then add the vegetable broth and bring to a boil. Let the meal swell in the vegetable broth for another 10 minutes at low temperature. Then add salt and lovage and puree everything together with a hand blender. Finally, pour the warming grain soup into bowls, garnish with chopped parsley and enjoy.
