summery grain salad (vegetarian)
In this recipe we will show you a refreshing summer salad with an ancient form of grain – the spelt. The ancient form of grain has been grown for over 10,000 years and has disappeared from the fields over time for reasons of efficiency. The grain is especially popular with vegetarians and vegans – on the one hand because of the large amount of minerals such as zinc, on the other hand because of the high protein content which the ancient grain can have. Ancient grain such as einkorn wheat, emmer etc. are significantly more nutritious than the conventional and modern wheat.
In these hot, summery days everyone is happy about a cool dish – that’s why we will show you now a recipe for a vegetarian ancient grain salad.
1 pepper (color of your choice)
1 bunch of chives
1 bunch of parsley
200g feta cheese
half a lemon
flaxseed as a topping
Soak the spelt overnight in plenty of water for grain salad. Then cook the corn with low heat for about 30 minutes to allow the grain to soak completely. If the spelt has the desired texture, add some butter or oil. Then let the grain cool down.
While the grain is cooling, wash the vegetables. Slice the cucumber and cut the tomatoes and peppers into small pieces.
Then shred the herbs. After that you should slice the feta cheese into small cubes.
Now mix the vegetables, the herbs and the feta cheese with the cooked spelt and marinate with the lemon juice, olive oil, salt and pepper. Optionally you can sprinkle a few flaxseeds over the salad.
The summery grain salad is best served at room temperature with a cool drink.
Of course, you can use other types of ancient grains like emmer instead of spelled.
