Grinding gluten-free grains, but also large and hard grains, is often an important concern today. People with celiac disease in particular place high demands on their mill. However, many household mills do not meet these requirements.
We have met the high demands and developed a mill that can also help you to grind flour from many gluten-free grains yourself at home.
The difference to the MAX grain mill is the cut of the grinding stones, which has to meet particularly high standards.
The MAX SPEZIAL grinder grinds
Big and hard grains like:

In many parts of Europe that is Grinding corn With a household mill, an important topic that we have taken on in detail at the request of our Italian customers. The AM 1 grain mill was first built more than 35 years ago. Technology and design were ahead Taken over from Mühle MAX for around 20 years and improved several times . Now we have adopted this proven concept as a template for the specific use of a mill for grinding corn and other hard, large grains.
Our concept:
For the first time since September 2016 the Mühle MAX has been manufactured with natural stone and now also with a special stone cut for large and hard things .
Even the extremely hard, red toothed corn can be ground for polenta.
Conventional types of maize (such as the well-known Marcella) can even grind finer than semolina.
Grinding capacity: Up to 1 kg of corn flour can be ground with this mill without any problems. The exact amount that is possible in one grinding process depends on the hardness of the grain and its oil content, but also on how finely you grind.
Types of corn : We would like to point out that there are many regionally different types of maize.
Some types of corn are so oily that they cannot be ground with any household grinder, while others are too hard for MAX. Unfortunately, it is not possible for us to grind all types of maize and evaluate the grinding results.
Many types of corn can be finely ground in one grinding process, but for some it is advantageous to coarsely grind it in an initial grinding process and then finely grind it.
Fineness of the flour – bran : Like all grains, maize has a hard shell called bran. These husk particles also appear as coarser particles in the maize flour, this is particularly the case with extremely hard maize species.
If necessary, the bran can be removed with a sieve.
Your regionally grown maize : If you are not sure whether your preferred, regionally available maize can be ground with our MAX grinder, simply send us a small amount (500 – 1000g) and we will test the possibilities.
Milling with natural granite stones:
Since the beginning of time, people have ground grain with natural stones. Granite is renowned for its durability, hardness and self-sharpening properties. This is what we consciously demonstrate through the warranty we offer.
Granite is nature in its purest form – without any bonding agent.
Impurities, such as pebbles that might be in your grain, are easily ground up by the granite stones. We are not aware of any stone particles breaking out and then getting into your flour.
Granite millstones therefore protect your teeth.
The FOOD grain is ground as naturally as possible with BIO granite stones.
Baking with flour ground on a natural stone is a real experience! Crispy breads, fragrant cakes and pastries reward the miller for his work.
Healthy cereal for breakfast?
Self-ground grain provides the precious foundation of a nutrient-rich breakfast.
The milling chamber
is always manufactured from solid beech wood, as beech wood best meets the high demands.
The grain rubs against walls inside the milling chamber. That is why we do not use plastics in this part of the mill (except for the stone supports).
We deliberately give preference to beech wood, because for decades this wood has proven to be the best for this purpose in terms of
- elasticity,
- Abrasion
- and durability
over the decades.
Unlike plastics, wood has an antistatic and antibacterial effect.
The coarse fine adjustment
is remarkably easy to operate with just one hand!
From FINE to COARSE or from COARSE to FINE can also be easily set during grinding by means of the rotary knob.
In contrast to a thread, the fineness of the flour is adjusted by raising and lowering the lower millstone.
This lifting and lowering system, similar to the clutch of a vehicle, changes the distance between the millstones and thus the degree of fineness of the flour.
The millstones are placed precisely parallel and flat on top of each other for decades and produce the finest flour.
The technically intelligent system has meanwhile proven itself over decades.
In line with our philosophy, we do not use commonly available threads made of plastic.
The 360 watt industrial drive unit
Is manufactured in Europe (not in China). It is dimensioned more powerful than needed and completely maintenance-free. The drives are durable and protected against overload. They are precisely matched to the size of the millstones.
Maintenance
The mill does not require any special maintenance.
To clean the mill from time to time, it can be opened with the help of a Phillips screwdriver.

I live in Canada and I love to bake for the whole family of 5.
We have had several times where we found plastic in the bought flour. So we decided to buy a mill and mill the flour for ourselves.
