More than 40 years ago, the “Original Salzburg Grain Mill MT 5“ was designed with a steel thread for adjusting the fineness of the ground flour.
Even today, decades later, pioneers and mill connoisseurs still speak of these mills and their high quality.
The concept of that time has proven its worthiness and mills built 30, 40 years ago are still in use today.
20 years later, in the years around 1990, the mill was modernized and equipped with a new adjustment mechanism, with bayonet lock. (See grain mill MT 5)
However, it turned out that this modernization involved compromises in terms of the mill’s versatility.
The elegant bayonet lock is best suited for milling small grains such as rice, wheat, rye, spelt, einkorn etc., but is shaken loose by large grains.
For many chefs today, however, experimenting with special grains such as kamut, maize, soybeans, etc. is interesting. People with allergies in particular attach great importance to being able to mill gluten-free grains, which are usually large and hard.
