Nutritious health bread

On our blog we have already shared some recipes from the passionate baker Cilli Reisinger with you. And so we have a great recipe for you again today: a health bread!

What makes this bread not only tasty but also rich in content is the variety of nutrients it contains: dietary fiber, proteins, carbohydrates and fats – especially from the grains. Since every type of grain also contains different amounts of micronutrients (vitamins and minerals), a grain mixture like the one we have with this health bread contains a lot of nutrients. And pumpkin seeds, sunflower seeds and spices contain not only vitamins and minerals, but also phytochemicals.

Ingredients

  • 500 g wholemeal wheat flourNutritious health bread
  • 500 g wholemeal spelt flour
  • 500 g rye flour (grind and sieve wholemeal flour)
  • 40 g yeast
  • 1 ½ tablespoon salt
  • 3 tbsp bread spice
  • 1 tbsp caraway seeds
  • 100 g pumpkin or sunflower seeds
  • 500 ml buttermilk
  • 500 ml water
  • seeds for sprinkling

Preparation

Take 100 ml lukewarm water from the ingredients and dissolve the yeast in it, let it rest for 5 minutes. Then prepare a dough with all the other ingredients and knead well. Leave the dough to rise for 1 hour.

Form 3 rolls and place them on a greased or baking paper-lined baking tray. Allow to rise again, brush with water, sprinkle with seeds (sunflower seeds, sesame seeds), push into the preheated oven and bake.

Baking temperature and baking time: Preheat to 220°C and bake for 20 minutes. Then switch back to 180°C and bake for another 50 minutes.
