Light winter dish with grain
The Christmas holidays are over and many of you might know these situations: one celebration after the other and you eat a lot every time. After this you probably prefer to eat something light and digestible again. We have a winter dish with spelt husks for you.
Spelt husks can easily be made with our Salzburg grain mills. You just have to use the coarse adjustment
• 1 savoy cabbage
• 150 g spelt husks
• 150 ml of water
• 1 onion
• 150 g of sheep cheese
• rapeseed oil
• salt, pepper, parsley
First boil the spelt husks with the water in a pot and cook for another five minutes. Cut the onion and fry separately in rapeseed oil. Then add the onion to the spelt husks and cook for a few more minutes.
Then blanch 10 large savoy cabbage leaves. It means that you have to put the savoy cabbage into boiling water for about 2 minutes. Caution – it should not get too soft.
Now cut the sheep cheese and also add it to the spelt husks and the onion. Season with salt, pepper and parsley.
Now put the stuffing in the savoy cabbage leaves and roll them up. To prevent the rolls from falling apart, you can hold them together with toothpicks or a thin string.
Now you can put the savoy rolls for about 15 minutes in the steamer (please adjust the steamer and the correct program). You can also bake it in the oven at 170 ° C for about 25 minutes. With the second option it can taste very good if you put the cabbage rolls in tomato sauce in a casserole and then put them in the oven.
