Buckwheat is not one of the “conventional” cereals, but is a pseudo-cereal. Since buckwheat is gluten-free, it is often used as an alternative in diets where gluten is avoided. Essential amino acids (protein building blocks) are also contained to a large extent in buckwheat, such as lysine.
