The book without wheat muesli base contains buckwheat, flaxseed and sunflower seeds:
Buckwheat is not one of the “conventional” cereals, but is a pseudo-cereal. Since buckwheat is gluten-free, it is often used as an alternative in diets where gluten is avoided. Essential amino acids (protein building blocks) are also contained to a large extent in buckwheat, such as lysine. The pseudocereal is also rich in important minerals such as potassium, calcium, phosphorus, iron, magnesium, etc. and vitamins such as theB1 and the B3.
Important micronutrients (i.e. minerals and vitamins) are also contained in sunflower seeds. Proportionally, sunflower seeds – as well as all other seeds, kernels and nuts – have a very high nutrient density. This means that they contain a lot of nutrients in relation to the energy content they bring.
Flaxseeds are a very good source of omega-3 fatty acids, which are also essential nutrients, fiber (which, among other things, stimulates digestion) and lignans, which are secondary plant compounds. Lignans can have anti-inflammatory, antioxidant, antimicrobial and neuroprotective effects.
Flaxseeds are also rich in protein, vitamins E and K, and calcium, magnesium, phosphorus, iron and copper.
