In this post we have chosen a recipe for delicious cookies with oat bran, which is really very easy to prepare and tastes great. Perhaps for one or the other afternoon coffee or as a snack in between, these cookies are perfect for it.
Ingredients for delicious cookies with oat bran
- 1 cup* of whole grain flour (freshly ground with your Salzburg grain mill; preferred grain: spelt or wheat)
- 1 ½ cups of oat bran (if you sieve your selfmade whole grain oat flour, you don’t have to buy the bran)
- 1 tsp. baking powder
- 1 handful sesame seeds
- ½ cup of ground hazelnuts
- 1 pinch of salt
- 2 handfuls of raisins or cranberries (both can be omitted, of course)
- 15 pitted, soft dates
- juice of ½ lemon
- 1 cup of milk or plant based milk
*filling quantity approx. 300 ml
First preheat the oven to 180°C top and bottom heat. Then put the dry ingredients (whole grain flour, oat bran, baking powder, sesame seeds, hazelnuts, salt) together in a bowl. In a separate and taller container, puree the dates with the lemon juice and milk/plant based milk. Then knead all the ingredients together (now also add the raisins or cranberries) until you get a homogeneous cookie dough.
Now form the cookies (about 1 cm thick) and place them on a baking tray lined with baking paper until all the dough is used up. Bake the delicious cookies with oat bran for about 10 minutes and then let them cool. Done!
