Bread with breadcrumbs

In last week’s post we not only told you about how versatile breadcrumbs can be used, but also explained how you can make them yourself without much effort. Actually, all you need is old, preferably home-baked bread and a Salzburg grain mill. But you can find more details – as already mentioned – in the article on our blog.

If breadcrumbs are used as an ingredient in a fresh bread, they can bind water and make the freshly baked bread last longer. They also bring a deliciously taste with them.

That’s why today we have the recipe for a bread with breadcrumbs for you. We wish you good luck with your baking!

Ingredients for the bread with breadcrumbs

  • 420 g wholemeal spelt flour (freshly ground with a Salzburg grain mill)
  • 70 g homemade breadcrumbs (and this is how it works >>)
  • 350 g waterBread with breadcrumbs
  • 5 g yeast
  • 6 g salt
  • 1 tablepoon bread spice
  • 75 g linseed (crushed)
  • 30 g pumpkin seeds (chopped)
  • 25 g oat flakes

Preparation

First mix the flour, breadcrumbs, yeast, salt and water and knead for a few minutes. Then the remaining ingredients are added, i.e. the bread spice, the linseeds, the pumpkin seeds and the oat flakes. Once again the dough is kneaded briefly. Afterwards you let the bread dough rise in a bowl for about 1.5 hours.

Now grease a box form with oil, put the dough into the form and let it rise again. When the volume of the bread dough has almost doubled, you can bake it. Heat the oven to 240°C and bake for about one hour.

As soon as your bread with breadcrumbs is ready, you should let it cool down before you cut it. Afterwards you can enjoy it just as you like!
