Berti’s fresh blueberry patties
Hello and greetings,
your Mäuserich Berti reports again! On my last trip through summery Austria, I stopped by fresh blueberries. Who knows me, knows that I love to eat, cook and bake for my life. And so I also took the opportunity this time and took a basket full of blueberries. This turned into a wonderful, sweet summer dish – and that is blueberry patties! Especially now in summer, when they are available everywhere in our country, the blueberries taste wonderfully sweet and fresh. Here is the recipe for you:
- 400g blueberries
- 150g spelt flour
- 4 eggs (separate)
- 150 ml milk (optionally also with soy milk)
- 3 tablespoons birch sugar
- 1 pack of vanilla sugar
- 1 shot mineral water
- (a shot of rum)
- Butter for frying
- Powdered sugar
First, the eggs are separated. Beat the egg whites with an added pinch of salt until firm. In the meantime, chill the beaten egg whites in the refrigerator. Then beat the egg yolks, sugar and vanilla sugar until creamy. Next come the liquids, that is, milk and a shot of mineral water. Finally, add the spelt flour to make a thick dough. It may be necessary to add some additional milk or flour to obtain a homogeneous mass. Finally, fold in the beaten egg whites and blueberries. If you like, you can also add a small shot of rum for flavor.
Now heat butter in a pan. To finish the blueberry patties, the batter is now ladled into the pan and the patties are fried out.
Because I, Berti, am such a sweet tooth, I sprinkled some powdered sugar over my fresh blueberry pastries and added a scoop of vanilla ice cream. I can tell you: that was really good!
