Berti’s Austrian dessert with fresh blueberries

Hello everyone,

here is Berti, mouse of the Salzburg grain mills! On my last trip through summery Austria, I passed a lot of blueberry fields. Everyone who knows me, knows that I like to eat, cook and bake for my life. And so I took advantage of the opportunity this time and took a basket full of blueberries. This became a wonderful, sweet dessert with blueberries! Especially in summer, where they are available everywhere in Austria, the blueberries taste wonderfully sweet and fresh. Here is the recipe for you:



  • 0,88 lbs blueberries
  • 0,33 lbs spelt flour
  • 4 eggs
  • 150 ml of milk (optionally with soy milk)
  • 3 tbsp birch sugar
  • 1 packet of vanilla sugar
  • 1 shot of mineral water
  • (a shot of rum)
  • butter for roasting
  • icing sugar



First, the eggs should be separated. The egg white should be beaten with an added pinch of salt. In the meantime, keep the egg white cold in the refrigerator. Then egg yolk, sugar and vanilla sugar are whipped to a creamy mass. Next the liquids, that is milk and a dash of mineral water, should be added. Finally, the spelled flour is added, so that a thick dough can be formed. You may need to add some milk or flour to get a homogeneous mass. Finally, the egg white and the blueberries are folded in. If you like, you can add a shot of rum for the taste.

Now butter is heated in a pan. To finish the dessert with blueberries, the dough is now added in portions into the pan and fried. The dessert looks similar to pancakes.

Because I, Berti, love desserts, I then sprinkled some more icing sugar over my dessert with fresh blueberries and added a scoop of vanilla ice cream. I can tell you: that was really good!
