Banana bread – fresh and vegan

You can’t really resist such a fresh and vegan banana bread with freshly ground wholemeal flour – can you? Because it not only tastes good, but also provides a lot of energy and fills you up. And the banana bread is super easy to prepare. You can enjoy it for breakfast with coffee or cocoa, as a dessert – spread with jam or nutmeg – or just as a snack in between.

For your fresh and vegan wholemeal banana bread you need:

Liquid ingredients:Banana bread - fresh and vegan

  • 3 ripe bananas
  • 110 ml plant based drink
  • 90 ml oil
  • 1 teaspoon vanilla

Dry ingredients:

  • 200 g wholemeal flour (freshly ground with a Salzburg grain mill; if possible spelt or wheat)
  • 2 teaspoons baking powder
  • 1 tablespoon of corn starch
  • 120 g whole cane sugar or alternative sweeteners (e.g. date sugar)
  • salt

Preparation:

First, preheat the oven to 180°C top and bottom heat.

Then peel the bananas, break them into pieces and put them into a bowl. Now crush the banana pieces with a fork. Then add the remaining liquid ingredients. Mix everything with a whisk.

In another bowl mix all dry ingredients. Then added the liquid ingredients to the dry ones. Everything is mixed until you have a homogeneous dough.

The dough now comes into a greased box form. Bake the banana bread in the already preheated oven for about 30-35 minutes. With a knitting needle you can test if the fresh and vegan banana bread is already done.
