Berti’s homemade winter pizza
Hello everybody here is Berti! I know you haven’t heard anything from me for a while, but of course I still did my favorite hobby: I cooked and baked. As healthy food and seasonal ingredients are important to me, of course I also tailor my recipes accordingly. I tried something new: a winter pizza! I also have the recipe for you and am always happy to receive feedback (:

Ingredients for the dough

• 500 g wholemeal flour (spelt wholemeal flour, can also be mixed with wheat wholemeal flour, and preferably freshly ground with a Salzburg grain mill)
• 250 ml lukewarm water (if necessary a little more)
• 3 tbsp olive oil
• a pinch of salt, a pinch of sugar
• 1 pack of dry yeast
• (natural yoghurt)

Ingredients topping

• a small glass of tomato sauce / passed tomatoes
• 2 large onions
• 150 g red cabbage
• 150 g of cabbage sprouts
• 1 mozzarella
• spices (basil, oregano, pepper, turmeric …)

• There are no limits for your choice of vegetables! You can also take pumpkins, mushrooms, spinach etc.
• Alternatively, you can also sprinkle sheep cheese or parmesan on your winter pizza.


Mix the whole wheat flour with the dried yeast and the lukewarm water, sugar, salt and oil to a dough. Maybe the dough needs more water. You can also add some natural yoghurt to the dough, it will be softer then. Cover the dough and let it rest for one hour in a warm place. Before baking knead the dough again for a short while and roll it out.
While the dough rests, you can prepare the topping: cut the onion, wash the red cabbage and cut into thin strips, wash the cabbage sprouts and cut into strips. The mozzarella should be grated.
Berti’s tip: As already mentioned, you can vary the vegetables as you like. But pay attention to where they are from and if they are in season right now.

After the dough is rolled out, first put the tomato sauce on top, top with the vegetables and spices. Finally, you should sprinkle the mozzarella over it.
Your winter pizza can now bake at 200 ° C for about 25 minutes. While the pizza is in the oven, you can make yourself a salad: for example, a beetroot salad with horseradish and cress.
